Ash Gourd Pachadi

A typical everyday Kerala dish. Have it with plain rice for a simple wholesome meal.

3 cups peeled ash gourd chunks (deseeded),
1 ½ cups whisked curds,
Salt to taste,
2 tsps coconut oil,
1 tsp mustard seeds,
1 tsp finely chopped ginger,
1 tsp chopped green chillies,
2 red chillies,
A few curry leaves,
1 tbsp sliced sambar onions,


Cook the ash gourd chunks with salt and a little water.

Heat the coconut oil in a small pan and add the mustard seeds, when they splutter add the red chillies and curry leaves. Let the red chillies change colour and then add the chopped ginger and green chillies and sliced sambar onions. Saute for sometime, ensure the onions do not brown. At this stage add the cooked ash gourd and cook through for 2 minutes. Let it cool.

Now fold in the whisked curds and adjust seasoning.

Goes well with plain rice.
