Tried this recipe from Kalpana Sareesh’s the other day, after making a few alterations and it was much liked by everyone at home. I am on a diet these days where I am avoiding wheat hence I did not taste it but the feedback from everyone else was great.
Here goes the recipe...
½ cup all purpose flour,
½ cup cornmeal,
½ cup cooked corn kernels,
1 tsp Italian seasoning,
Approximately 1 cup of milk,
1 ½ tbsp vegetable oil,
A pinch of sugar,
1 ½ tsp baking powder,
½ tsp red chilli flakes,
1 tbsp finely chopped green chillies or to taste,
Salt to taste,
1 tsp flax seeds
In a mixing bowl combine the all purpose flour, cornmeal, sugar, baking powder, Italian seasoing, green chillies, chilli flakes and cooked corn kernels. In another bowl whisk together half the milk, oil and egg.
Mix the wet and dry ingredients well. Add the remaining milk bit by bit till you get a batter of dropping consistency.
Preheat the oven for ten minutes to 200oC. Grease and flour a cake tin and pour the batter, top with the flax seeds and bake at 200oC for 25-30 mins.
Unmould and let it cool on a wire rack and cut into cubes and serve with a pat of butter.
