Methi Mathri


Who doesn’t like mathris with chai. But yes most of us avoid it as it is full of Vanaspati ghee irrespective of where you buy it from. So the other day I decided to make it at home where I have control of what goes in. I made it only using ghee and surprised my family at tea time with these golden beauties.


Its very easy to make and most of us will have all the ingredients in our kitchen. So here goes the recipe.
Ingredients:
2 cups of refined flour,
1 tea spoon salt,
Half a teaspoon or ajwain,
1tbsp kasoori methi,
4 tablespoons ghee,
1 tsp pepper corns
Refined oil for deep frying
Method
Crush the pepper corns very coarsely.
Take flour in a bowl, add salt, ajwain, kasoori methi, pepper corns and mix well. Melt the ghee and pour into the dry ingredients. Mix all these together. Add cold water bit by bit and knead it into a tough dough. Cover and rest the dough for fifteen minutes.
Divide the dough into twenty-four equal balls and flatten them slightly. Press lightly the center with your thumb to make a slight depression. Prick with a fork.
Heat sufficient oil in a pan. Slide in the mathris and deep-fry on medium heat till golden and crisp. Be patient while deep frying as it has to be done on a medium or low heat to ensure complete cooking and a crispy outcome.
Drain completely and cool. Once completely cooled store in an airtight container.

Enjoy it guilt free as sometimes it is ok to tip the calorie meter 😊
