Walnut Fudge

Sometimes there are recipes which you intend to make, but they don’t get made for many years. This is one such recipe, I do not even remember from where I have noted this in my diary…it must have been noted some 25 years ago. Since it is a slightly tedious recipe it never got made. But this time I decided to just do it or it will only remain as the written word.


This recipe was also one where it started off as something but turned out to be totally different, the original recipe called for it to be rolled into balls…I never managed to acquire that consistency so decided to convert it into a fudge. So as fudges go this recipe might be quite different…but I did dish this out as fudge and it was much appreciated, thus finding a place on the blog too.  

Ingredients

1 litre full fat milk,
20 glucose biscuits (Parle G),
250 grams sugar,
2 tablespoons of cornflour,
200 grams walnuts,
50 grams cocoa powder,
2 tablespoons ghee,
2-3 tablespoons of dessicated coconut

Method

Boil the milk after keeping 2 tablespoons of milk aside. Boil this in a shallow pan till it reaches one third of its original consistency. You will need to keep stirring it occasionally. At this stage add 200 grams of sugar and continue to cook till it thickens again.

Mix the cornflour with the 2 tablespoons of milk kept aside at room temperature and add it to the thickened milk, while stirring the milk on low heat. It will slowly thicken to the consistency of fudge. At this stage turn off the heat.

Heat the remaining 50 grams of sugar in a wide thick bottomed vessel on a very low heat till it caramelizes. Now add in the chopped walnuts and mix till well coated. Remove this and spread on a slightly greased plate and let it cool. Once cool crush it to a coarse powder. Add this to the thickened milk along with the cocoa powder. 

Powder the glucose biscuits to a fine powder and add this (leaving some for decoration) to to the fudge to give it more body.

Pour the fudge onto a platter and decorate with the biscuit powder and desiccated coconut.
