Coconut Pudding
Ingredients
2 eggs,
2 cups cake crumbs,
1 cup dessicated coconut,
½ cup sugar,
2 tbsp oil or butter,
½ cup milk,
1 tbsp tutti frutti, candied peel or
chocolate vermicelli
Method
Mix sugar, oil and milk. Add cake crumbs
and mix well (I did not have 2 cups of cake crumbs so I used 1 ¼ cup of cake
crumbs and ¾ cup of bread crumbs). Now add desiccated coconut and mix with a
fork. Grease a baking dish. Layer this mixture along the bottom of the dish.
Beat the eggs well and pour over the cake
layer. Mix gently with a fork. Decorate with tutti frutti, candied peel or
chocolate vermicelli.
Preheat the oven for 10 minutes at 180oC.
Bake the pudding for about 15 minutes.
Serve warm or cold.
