Peas and Dill Vada
This is the time of the year when green peas are flooding
the market and my refrigerator is stocked with fresh shelled peas. However, they
are no longer sweet and do not taste as well in sabzis as the tender sweet peas
so I try to use them in different ways. Today I am sharing one such recipe.
This is a deep-fried snack. I make deep fried dishes very
rarely so whenever it is made everyone at home enjoys them.
Ingredients
Half a
kilo of shelled green peas,
4 tbsp
gram flour or besan,
4 finely
chopped green chilies,
4
tbsp chopped dill leaves,
1/3
tsp red chili powder,
1/3
tsp black pepper powder,
A
pinch of baking soda
Oil
for deep-frying
Method
Boil
the peas with 1/2 cup of salted water until tender. Once it is cool mash it.
You can also blitz it in the mixer.
Mix
the mashed boiled peas with gram flour, green chillies, dill leaves, salt, red
chili, black pepper powder and baking powder.
Knead this to a smooth mixture.
Heat
oil in the frying pan and take a small portion of the mixture and shape it like
a flat cutlet. Slip it into the hot oil and fry till golden brown. Repeat till
all the mixture is used up.
Serve
with tomato sauce or green coriander chutney.
