Date and Walnut Cake
Baked a cake after a very long time today
and thoroughly enjoyed myself.
Ingredients
400 grams refined flour,
200 grams deseeded dates,
200 grams powdered sugar,
200 grams butter or margarine,
5
eggs,
½ cup of vanilla flavoured custard powder,
40 grams of milk powder,
1 tsp baking powder,
1 tsp baking powder,
100 grams of walnut kernels,
1 tsp vanilla essence,
1 cup milk
Method
Ensure all the ingredients are at room
temperature. Cream the butter and powdered sugar. Beat the eggs together in a
separate bowl and combine with the egg and sugar mixture.
Next add the custard powder, milk powder
and mix well. Now fold in the flour and baking powder and mix well. Add the
milk and mix well to get a homogenous mixture. Finally add the vanilla essence,
chopped walnuts and chopped dates. Add more milk if you think the consistency is too thick.
Grease and flour a cake tin and pour the
cake batter. I made a round tin and also had some batter left over to make six
cup cakes.
Preheat the oven for ten minutes at 190oC
and bake for 45 minutes. For the cupcakes you will need to bake it only for 20 minutes.
