Smoked Brinjal with Green Chutney
This is actually just a variation of
baingan ka bharta using green chutney.
Ingredients
1 large sized brinjal,
1 medium sized tomato,
1 medium sized onion,
1 tbsp green chutney,
2-3 green chillies,
½ tsp cumin seeds,
Some coriander leaves,
Salt to taste,
1 tbsp oil
Method
Make longitudinal slits on the brinjal and
smear some oil. Bake it in an oven at 200oC for about 40-45 minutes.
Alternatively you can even roast it over the direct flame. Peel and mash well.
Add the chopped coriander leaves and salt to it.
Chop the onion and tomato. Heat oil and add
the cumin seeds, once they splutter add the green chillies and onion and fry
till the onion turn light brown in colour. Add the green chutney and fry for 2
minutes. Now add the mashed brinjal and fry for another 5 minutes. Add the
chopped tomato and sauté well. Serve with chapattis.
