Rice Noodles with Tofu and Greens
I am not too fond of tofu but I quite liked
tofu in this recipe, all the ingredients came together quite well.
Ingredients
100 grams rice noodles,
340 grams of tofu,
200 grams of spinach and pak choy,
3 tbsp of tomato ketchup,
1 tbsp of soya sauce,
1-2 tbsp of red chilli paste,
1 tbsp seasame oil,
1 tbsp shredded ginger,
2 sliced garlic cloves,
1 halved lime
Method
Wash and chop the spinach and pak choy.
Place the rice noodles and the greens in a large bowl and pour boiling water.
Cover it with a lid and let it stand for about 5 minutes. Drain and refresh in
cold water.
Cut the tofu into biggish cubes. Mix the
tomato ketchup, soya sauce and the red chilli paste in a small bowl.
Heat half the sesame oil till very hot in a
non-stick pan. Fry the tofu cubes in batches till brown on all sides. Keep them
aside.
In the same oil, add the remaining sesame
oil and add the shredded ginger and the sliced garlic. Fry till they turn
golden brown and then add the chopped greens and noodles and toss well. Next
add the tofu and the ketchup mixture. Mix well and cook till everything is
heated through. Serve with the lime halves.
