Mushroom Sandwich
I got this recipe idea from my friend
Maneesha and now I make this quite often. I have made changes to her recipe
though. Hers was an open sandwich. My hubby didn’t earlier like mushrooms and
this is how I got him started on mushrooms. He doesn’t mind it as the mushrooms
are chopped really fine in this recipe. He doesn’t like to bite into a big
mushroom chunk...fussy men!
Ingredients
10 slices of brown bread,
200 grams of button mushrooms,
A good handful of parsley (optional),
1 ½ tsp olive oil,
Salt to taste,
Crushed black pepper,
Red chilli flakes (optional),
Butter for spreading,
5 cheese slices
Method
Wash the button mushrooms and finely chop
them. Chop the parsley too if using them.
Heat the oil and add the chopped mushrooms.
They will release a bit of fluid, cook till all the fluid dries up. Now add the
chopped parsley, salt and pepper and sauté for about another minute. Switch off
the heat and add the red chilli flakes if using them.
Divide the filling into 5 portions.
Butter the bread slices and spread the
filling on 5 of the slices. Top with a slice of cheese. Place the remaining
bread slices over these prepared slices.
Toast and served with tomato sauce.
Note: You can also sauté some finely chopped onions before frying the
mushrooms.
