Oatmeal Banana Bread
I made this a couple of days back. It is
actually a cross between a bread and a cake. It is pretty moist and dense and
has a strong banana flavour.
One thick slice is ideal as a snack, you
will find it both filling and not too high on calories too.
Ingredients
1 ¼ cup whole wheat flour,
½ cup brown sugar,
½ tsp salt,
½ tsp baking soda,
¼ tsp baking powder,
½ tsp cinnamon powder,
3 tsp refined oil,
2 beaten eggs,
3 large ripe bananas,
1 cup uncooked oats (not the quick cooking
variety)
Method
Add all the dry ingredients into a large mixing
bowl. Add the oil and beaten eggs and mix well.
In a smaller bowl, mash bananas with a fork.
Add the mashed bananas and oatmeal to the batter.
Grease and flour a loaf pan. Preheat the
oven for ten minutes at 190oC. Pour batter into the pan and bake for
about 45 to 55 minutes. Remove from the oven and let it cool for 5 minutes. Flip
it over and cool on a wire rack for another 10 minutes. Slice and serve. You
can serve it warm as well as at room temperature.
