Beetroot and Paneer Salad

Summers are really the time for salads and since we had a heavy lunch of parsley-roasted whole chicken for lunch decided to have a light dinner. Made this salad I had been meaning to for a long time.

1 large beetroot,
½ cup shredded cabbage,
1 tsp olive oil,
1 tsp red wine vinegar,
1 tsp lemon juice,
1 tsp Dijon mustard,
1 tsp honey,
¼ tsp dried thyme,
Salt to taste,
Crushed white pepper,
¼ cup diced paneer


Boil the beetroot. Peel and dice it.

Mix the olive oil, red wine vinegar, lemon juice, Dijon mustard, honey, thyme, salt and white pepper together.

Mix the beetroot, shredded cabbage and paneer in a salad bowl. Drizzle the dressing and toss it together. Serve chilled.
