Simple Potato Sabzi with Sprouts
Ingredients
4 medium-sized potatoes,
1 medium-sized onion,
1 medium-sized tomato,
3 green chillies,
½ tsp red chilli powder,
¼ tsp cumin seeds,
¼ tsp chopped ginger,
1 green cardamom,
¼ tsp garam masala powder,
1 tbsp oil,
Salt to taste,
A handful of sprouted moong
Method
Peel
and dice the potatoes. Chop the onion, tomato and the green chillies.
Heat the oil and add the cumin seeds, once
they splutter add the onion, ginger and green chillies. When the onions turn
light brown add the chilli powder, crushed cardamom and the tomato. Next add
the turmeric powder, potato, salt and sprouted moong. Add about a cup of water
and cook till done. Sprinkle the garam masala powder. Serve hot with rotis.
