Instant Raw Mango Pickle
This is a mango pickle which was generally made
at our neighbours place in Mumbai, a very typical Mallu pickle. This is mostly
served in Mallu traditional meals.
Ingredients
2 cups finely chopped raw mango,
2 tsps red chilli powder,
¼ tsp turmeric powder,
1 tsp fenugreek powder,
1 pinch of asafoetida,
½ tsp mustard seeds,
Salt to taste,
2 tsps oil
Method
Mix the mango, 1 tsp red chilli powder,
turmeric powder, fenugreek powder, asafoetida and salt in a bowl. Heat the oil
and add the mustard seeds, once they splutter add the remaining red chilli
powder. Pour this over the mango mixture and mix well. It is best o serve it
after four hours but you can also serve it immediately.
