Carrot Cake
I was not really intending to bake a cake
this week as just last week I had baked a fruit cake. This cake is really the
result of a vegetable shopping goof up: I bought about 1 ½ kg of carrots and my
father also bought a kilo. I didn’t really want to make gajar ka halwa wanted
to make something not so time consuming..so found Sanjeev Kapoor’s recipe of
carrot cake and gave it a shot.
Ingredients
2 cups of coarsely grated carrots,
¾ cup whole wheat flour,
3 eggs,
2/3 cup of sugar,
¼ tsp salt,
½ tsp cinnamon powder,
¼ tsp baking powder,
½ tsp baking soda,
2 tbsp oil
Method
Beat the eggs with the sugar till light and
frothy. Sift the whole wheat flour, cinnamon powder, salt, baking powder and
baking powder into the egg mixture. Mix well and add the grated carrots. Also fold
in the oil and mix well.
(That is my little niece's hand in the photograph, she is just 8 months old and still completely toothless but she thinks she can eat anything be it a plastic bag, a ball, newspaper and of course anything served in a plate:-) )
Pre heat the oven at 180oC. Grease
and flour a baking tin and pour the batter in. Bake in the preheated oven at 180oC
for 40 minutes. Cool, slice and serve.
