Fried Brinjal
I seem to making brinjal quite a lot these
days. Either bharta or stuffed, the other day I made fried brinjal which goes
well with plain rice and dal or even rotis for that matter. I generally make it
just by smearing it with chilli powder, coriander powder, turmeric powder,
cumin powder and amchur. But this time I made it a little differently.
Ingredients
1 big brinjal,
1 tsp ginger paste,
1 tsp garlic paste,
Red chilli powder to taste,
Turmeric powder,
1 tsp coriander powder,
½ tsp garam masala powder,
Salt to taste,
Juice of half a lemon,
2 tbsp of oil
Method
Slice the brinjal into ½ inch thick slices.
Mix all the ingredients except the brinjal and oil together. Apply this on the
brinjal slices evenly and keep aside for about 15 minutes.
Heat a non stick pan and place the brinjal
slices in one layer. Let them sear for about two minutes, then flip them over. Drizzle
the oil over and cook for another 10 minutes or so flipping them over.
